Alexandre farms organically, and by the end of 2023, the entire estate will be certified organic. “The vines are grown with the idea that nothing is taken for granted,” he says, “and that each new season is a challenge. Follow the rules dictated by nature, which is never its clone from one year to the next, but also by the desire to find methods that will make the vine evolve in an ever more complete environment.” True to his philosophy, each year’s winemaking adapts to its unique vintage, as Alexandre commits himself to further research and learning. For this 2018 offer, there was no malolactic fermentation as it was a warmer vintage. Only one cuvée was produced in 2018: Sous les Trous.

Alexandre was just 25 when he produced his first vintage in 2014. He has received a great deal of recognition for his one hectare garden. Alexandre Grimée is a producer to watch.

2017 Clos des Papes • Chateauneuf du Pape

He blends grapes from his different plots to co-ferment in large vats, after which he then re-blends in to large 20-55 hectoliter wooden foudres (casks) to mature for 15 months. New or small barrels are never used, “I like the oak to make an indirect impact – I only want tannins from the grape skins not even the pips and certainly not the stalks” says Avril. And though it may not be widely known, this domaine has been buying corks from the same producer in Portugal ever since 1926!

The wines are no doubt enticing, garnering great praise from many publications and critics such as Wine Spectator who awarded their 2005 vintage as “Wine of the Year”, stating that “in the Southern Rhône's recent trio of great vintages starting with 2003, no other Châteauneuf-du-Pape domaine has produced better wines than Clos des Papes”. But the accolades don’t stop there, as Robert Parker followed on to pronounce the 2007 vintage “the greatest Chateauneuf du Pape made since 1978 and 1990”.

It always surprises us how many wine lovers here in Hong Kong have never really given Beaujolais a proper chance. It is easily one of our favourite regions to drink, and one of the most rewarding parts of being a wine merchant is shining a light on these hidden gems and sharing them with our community.

On 17 June (Wednesday), we are opening up our Central tasting room to show you exactly why we love this region so much. We have aged Bojo going back to 2017 so you will really appreciate how these wines can age. While young Beaujolais is lovely and fresh, it also ages beautifully, turning into something deep, complex, and incredibly rewarding. 

It is going to be a relaxed, walk-around tasting featuring many of our favourite producers including incredible names like the Bret Brothers, Valma, and Mee Godard, Jane Eyre, Desjourney and more...

Tickets are HKD 200, which is fully redeemable against any purchase of HKD 3,000 or more during the event night. The Experience
We are looking forward to welcoming Australian-based Master of Wine Ned Goodwin back to Hong Kong for this special series of tastings. As the Brand Ambassador for the estate, Ned brings decades of insight and an engaging speaking style to the table. For this installment of the series, we head to the elegant One Harbour Road for a dinner dedicated to one of the most revered names in the Côte de Nuits: Jean-Marie Fourrier.

Often described as the "quiet genius" of Burgundy, Jean-Marie took over his family’s Gevrey-Chambertin estate at just 23 after a formative stint with the legendary Henri Jayer. He has spent the last three decades perfecting a style that is entirely his own, working almost exclusively with old vines — some dating back to 1910 — and famously avoiding the "mask" of new oak.

As Jean-Marie says, "we make wine with grapes, not with barrels." The resulting wines are remarkably seductive and transparent. We will be exploring the new project Jean Marie took on when they acquired the old Comte de Chapelle Domaine based in the Cotes de Beaune. This new addition to the winery added vineyards in Beaune, Pommard, Volnay, Meursault, Chassagne, Puligny and even Corton Charlemagne.  

We are excited to have Ned Goodwin MW join us and share why these wines have become some of the most coveted bottles for collectors. His understanding of how Fourrier’s textural delicacy interacts with the savoury depth of Cantonese cuisine makes him an ideal guide for the evening. Set against the backdrop of Victoria Harbour, this will be an intimate look at some of the most soulful Pinot Noirs being made in the Côte de Nuits today.

The Experience
We are bringing our series with Ned Goodwin MW to the one-Michelin-starred Beefbar for an intimate dinner centered around Bass Phillip. A deep dive into a producer widely regarded as the 'Holy Grail' of Australian Pinot Noir.

For decades, this estate has stood as the Southern Hemisphere’s most serious answer to Burgundy. It was built on the simple-but-difficult-to-achieve belief that with tiny yields and obsessive farming, the deep soils of South Gippsland could produce wines with the structural muscle and longevity of a Grand Cru. These have always been some of the most elusive and respected bottles in our cellar.

What makes this dinner particularly timely is the transition currently happening at the domaine. Since Jean-Marie Fourrier took over winemaking in 2020, we have seen a shift in the glass, where the historic power of Bass Phillip is being refined by Jean-Marie’s signature precision and "light touch". It is a rare moment where the legacy of an Australian pioneer meets the influence of a Côte de Nuits icon.

Ned Goodwin MW has followed this journey closer than most. He will be joining us to discuss how these wines are evolving under Jean-Marie’s hand and where they sit on the global stage today. We have paired the range with a menu designed specifically to match the intensity and earthiness of the Gippsland terroir, all set within Beefbar’s sleek, modern take on the classic steakhouse.

Long overshadowed by Chardonnay, Aligoté has become a proving ground for some of Burgundy’s most respected producers. Meticulous farming, old vines, and careful élevage — the same seriousness once reserved for grand cru Chardonnay is now being lavished on this historic variety.

This intimate evening will feature eight bottles for just twelve guests, served blind in a thoughtful sequence. Expect the full spectrum Aligoté can achieve today: electric and mineral, layered and lees‑textured, and even a touch of skin‑contact intrigue.

Many of the names in this lineup are better known for highly allocated Pinot Noir and Chardonnay. Seeing them turn their attention to Aligoté offers a fascinating glimpse into both terroir and philosophy.

And we must highlight the two bottles insiders can’t stop talking about.

Guilbert Gillet “Les Grands Champs” Vieilles Vignes 2020 — tiny production, old vines, now firmly cult among Burgundy die‑hards. Dense, layered, and astonishingly serious for the appellation, it’s one of those bottles people whisper about and scramble to secure.

William Kelley Bourgogne Aligoté 2022 — yes, that William Kelley. Extremely limited, fiercely allocated, and currently one of the hottest wines in Burgundy conversations. Among sommeliers and collectors, it’s already become a “did you get one?” bottle.

Together, the flight promises a playful yet immersive exploration of modern Aligoté – expect surprises, lively debate, and a genuine recalibration of what this grape is capable of at its highest level.

Alexandre farms organically, and by the end of 2023, the entire estate will be certified organic. “The vines are grown with the idea that nothing is taken for granted,” he says, “and that each new season is a challenge. Follow the rules dictated by nature, which is never its clone from one year to the next, but also by the desire to find methods that will make the vine evolve in an ever more complete environment.” True to his philosophy, each year’s winemaking adapts to its unique vintage, as Alexandre commits himself to further research and learning. For this 2018 offer, there was no malolactic fermentation as it was a warmer vintage. Only one cuvée was produced in 2018: Sous les Trous.

Alexandre was just 25 when he produced his first vintage in 2014. He has received a great deal of recognition for his one hectare garden. Alexandre Grimée is a producer to watch.

2017 Clos des Papes • Chateauneuf du Pape

He blends grapes from his different plots to co-ferment in large vats, after which he then re-blends in to large 20-55 hectoliter wooden foudres (casks) to mature for 15 months. New or small barrels are never used, “I like the oak to make an indirect impact – I only want tannins from the grape skins not even the pips and certainly not the stalks” says Avril. And though it may not be widely known, this domaine has been buying corks from the same producer in Portugal ever since 1926!

The wines are no doubt enticing, garnering great praise from many publications and critics such as Wine Spectator who awarded their 2005 vintage as “Wine of the Year”, stating that “in the Southern Rhône's recent trio of great vintages starting with 2003, no other Châteauneuf-du-Pape domaine has produced better wines than Clos des Papes”. But the accolades don’t stop there, as Robert Parker followed on to pronounce the 2007 vintage “the greatest Chateauneuf du Pape made since 1978 and 1990”.
