Domaine David Moret crafts some of the most refined and captivating white Burgundies, embodying the classic Côte de Beaune style: bold, textured, and richly expressive, yet lifted by remarkable freshness and elegance. The domaine is widely admired for its precision, finesse, and profound ability to translate Côte de Beaune terroir into bottle. Critics and merchants frequently highlight wines like the Meursault 1er Cru Les Perrières as "consistently concentrated, with the power, structure, and aging potential to rival many Grand Cru from the Côte de Beaune."

Founded in 2000 as a micro-négociant David Moret sources small, meticulously chosen parcels from trusted growers — forgoing vineyard ownership to focus on quality over quantity. Working closely with his partner Clarisse, he maintains a modest operation tucked down a quiet lane just outside Beaune’s ring road, complete with a practical winery and extensive underground cellars dedicated to patient aging. Production remains deliberately limited, with allocations primarily directed to France and Northern Europe, where the wines grace many Michelin-starred lists.

As our co-founder Jay Ginsberg recalls: "We first got introduced to David and Clarisse back in 2023 by a good friend who spoke very highly of their wines, having known them from her UK days. I was intrigued by their impressive range of whites across my favorite Côte de Beaune vineyards, from Meursault to Puligny-Montrachet. David's long-standing relationships with top growers are the key to his success as a négociant. When I first tasted them, I was struck by the voluptuousness, richness, and flamboyance — less common today amid the trend toward mineral-driven, racy styles. Like David's personality, the wines speak their terroirs confidently. These are the bold Burgundian whites reminiscent of the best vintages from 20 years ago — if you've had Dugat-Py whites, that's a good comparison. They are monumental white wines that explode in the glass. Even the humble Bourgogne Blanc seems to punch above its appellation and gives you something bigger than you would expect."

History and Background

David Moret took an unconventional route into Burgundy winemaking. After studying viticulture and oenology, he entered the trade by selling winery equipment to producers across the Côte de Beaune — a role that let him build deep, enduring relationships with many of the region's finest growers.

In 1999, he took the leap, purchasing his first barrels to launch as a micro-négociant. Committing exclusively to white wines, he sources small, high-quality parcels from trusted partners in premier appellations like Meursault, Puligny-Montrachet, and Chassagne-Montrachet. His network has only strengthened over the years, securing consistent access to exceptional vineyard sites. The annual output remains around 7,000 bottles, ensuring close attention to every detail.

Vineyard and Terroir

Though David Moret owns no vineyards himself, his success stems from enduring, close-knit partnerships with a select group of dedicated growers farming some of the Côte de Beaune’s most esteemed sites.

Each year, he thoughtfully selects small parcels, prioritising modest yields, manual harvesting, and environmentally conscious viticulture. He works together with his growers to maintain vines in peak condition — favouring reasoned, low-intervention practices such as copper-based treatments and natural defenses over synthetic pesticides, along with organic fertilisers and manual soil work — ensuring the fruit fully expresses its terroir.

Winemaking Philosophy

David Moret employs a minimalist, low-intervention approach in the cellar, allowing the fruit quality and distinctive terroir of each parcel to shine through unadorned. Grapes arrive in small boxes and are gently whole-cluster pressed shortly after harvest, then gravity-fed into French oak barrels for natural alcoholic fermentation with indigenous yeasts. Malolactic conversion occurs spontaneously, followed by aging on fine lees for 9 to 18 months (varying by cuvée and vintage), with regular bâtonnage to build richness and creamy texture. New oak is used sparingly, typically 25 to 40%, providing subtle structure and support without overwhelming the wine's innate character.

The resulting wines are opulent and creamy, characterised by layered fruit flavours and a discreet oak influence, yet consistently elevated by vibrant acidity that preserves freshness and supports long-term ageing potential. They are crafted to provide immediate enjoyment in their youth while developing greater complexity and depth over a decade or more.

 From Puligny-Montrachet comes refined wines with generous character, including the village-level bottling and the elegant 1er Cru Les Folatières, alive with honeysuckle, white peach, nectarine, and a broad, structured palate framed by tangy fruit and subtle chalky notes. Crowning the lineup is the Corton-Charlemagne Grand Cru, a powerfully dense wine with ripe orchard fruits, honeyed depth, and profound terroir expression built for long-term ageing.

The wines are bold and intense but still very much showing a sense of place and the terroir. It is an old-school style that still appeals to many and steers away from the trend towards lean and mineral-driven wines.

2017 Clos des Papes • Chateauneuf du Pape

He blends grapes from his different plots to co-ferment in large vats, after which he then re-blends in to large 20-55 hectoliter wooden foudres (casks) to mature for 15 months. New or small barrels are never used, “I like the oak to make an indirect impact – I only want tannins from the grape skins not even the pips and certainly not the stalks” says Avril. And though it may not be widely known, this domaine has been buying corks from the same producer in Portugal ever since 1926!

The wines are no doubt enticing, garnering great praise from many publications and critics such as Wine Spectator who awarded their 2005 vintage as “Wine of the Year”, stating that “in the Southern Rhône's recent trio of great vintages starting with 2003, no other Châteauneuf-du-Pape domaine has produced better wines than Clos des Papes”. But the accolades don’t stop there, as Robert Parker followed on to pronounce the 2007 vintage “the greatest Chateauneuf du Pape made since 1978 and 1990”.
