This is a hidden legend in Barolo who farms 1.5 hectares from a small hillside vineyard of 300-400 metres called Paiagallo. His winemaking is super old-school and natural, with no chemicals in the vineyard, foot-pressed grapes, natural yeasts, no temperature control, long ferments in wood, and ageing in 35 hectolitre Slavonian oak botti for 24 months. Only 6000 bottles are produced each year, which makes his wines super rare. There is hauntingly good perfume and amazing structure to his wines, reminiscent of what you would expect from the greats like Rinaldi or Bartolo Mascarello. This is probably one to lay down, but these are rare magnums that can be cellared for a long time. Only 6 remaining!
