Another great “at home” wine and a name you should put on your radar if you want to see the new wave of natural winemakers in Burgundy. Nicolas is a fascinating winemaker, his wines are fruit-focused, gently extracted, a deft touch of oak, unfined and unfiltered with min sulfur. This Pinot Noir evolves a lot over the meal (or a couple of days if you want to revisit) but for me, this is half the fun of discovering new wines and styles.
