Weingut Wasenhaus, run by Alexander and Christoph Wolber-Götze in Staufen near the French border, farms old-vine parcels in Staufen and the Kaiserstuhl. After training at top Burgundian estates (Domaine Leflaive, Comte des Armand, de Montille), they returned to apply Burgundian know-how to Baden’s terroir. Their south‑east facing, steep vineyards benefit from cool Black Forest night winds, yielding ripe grapes with high natural acidity. They follow biodynamic principles and practice minimal-intervention winemaking. Some Pinot Noir and Pinot Blanc vines approach 100 years, cultivated despite the heavy manual labor required on steep sites like Ölberg.
