Michael was previously the sommelier at the American Town Club and was at the Cricket Club educating and advising members there on all wine matters. He’s an active member of the local wine industry and has been awarded as the Winner of the Bourgogne Wines Club in 2020 and came in 3rd at the Best Sommelier Great China competition in 2018. With a university degree in International Hospitality Management, a Certified Sommelier and working on his WSET Level 4 Diploma, he is more than equipped to handle any of your wine inquiries. With previous experience working as a Sommelier, I got the chance to taste wines from all wine producing countries. I really enjoy exploring hidden gems and looking into boutique but quality focused producers. I love to judge wines by balance, friendliness in food pairing and their expression of terroir. Recently, I came across a lot of natural wines or low interventional wines, and I have to say I enjoyed them a lot. Therefore, I pick a few from my current favourites and want to share with you little background behind these interesting wines.

Cedric Bouchard started making Champagnes in 2000, and he chose to practice viticulture with reference to Biodynamic. He loves to produce Champagne from single vineyard, single grape varietal and single vintage with extremely low yields. The wines are fermented with indigenous yeasts and are bottled without fining and filtration. This wine has very unique aromatic expression of fruit and excellent balance.

They are practicing minimal intervention for winemaking and praised for making well-balanced wines achieving high level of intensity, structure and finesse. 2015 is an extraordinary vintage in Cote d’or, and arguably one of the best vintage of the century. The wine is very approachable now but able to keep for at least another ten years.

I don’t drink a lot of Refosco normally, but this bottle is always an exception. Refosco to me is like something bold and heavy, with ripe fruits and high tannins. However, this wine is delicate and very well-balanced, which went way beyond my expectation. With its high tannin and full-body nature is a very food-friendly wine that I enjoyed pairing it with Italian and even Chinese food.
