Owners Jason Ginsberg and Mandy Chan are husband & wife, parents, wandering travellers, enthusiastic wine lovers and amateur cooks. We have always been inspired by people who have been able to create a life for themselves while actualizing their dreams. In 2010 shortly after the financial crisis, we decided to change our careers, pack our bags & moved our young family to Hong Kong to start our lives as wine merchants.With Ginsberg+Chan, our goal is to always have a cellar of wines that is fun to dig through. A treasure trove of fine wines with great provenance. We hope that every time you check out our list, you’ll discover something that’s intriguing and special.Working with a great network of trustworthy people, allows us to source rare & distinctive wines at a fair price. We also source directly from private individuals who have kept their wines with great care. All the wines listed are company stock. We carry a small amount of consignments from our customers who have chosen to sell their wines with us. As retailers, whether online or in person, we embrace the spirit of a traditional wine boutique where our customers get a real sense of our shop’s identity – and the people who run it.

Our Team

Joe Fong

Assistant General Manager

Joe is our Assistant General Manager. A veteran at Ginsberg+Chan, she has been with us since our early beginnings in Happy Valley, having previously worked many years in the Macau wine industry. She's been an F&B wine trainer, written newspaper articles, expertly arranged wine dinners and tastings and hosted wine ambassadors. A confident wine specialist she exudes an honest charm. She likes to travel especially something related to Wines & Spirits. Speak to Joe about wines you may be looking for or ask her for recommendations on wines in our list that will suit your personal interests or business needs. Joe speaks Cantonese, English and a little Mandarin and Japanese.

Ken Man

Fine Wine Specialist

Ken has had a vibrant experience in the wine trade, beginning his career in London’s retail and wholesale scene before relocating to Hong Kong in 2014. After some time working for a fine wine magazine where he enjoyed writing and managing events, Ken joined Ginsberg+Chan as their Fine Wine Specialist, advising clients from food and wine pairing to introducing up-and-coming producers they should be on the lookout for. A keen wine enthusiast who is adamant that he can never stop learning, he attained his WSET Diploma in 2019, and has been a regular judge at Decanter Asia and World Wine Awards. When not reading up on the latest geeky wine news, Ken can be found glued to the screen, watching cooking channels on YouTube, thinking of the next recipe he can experiment with. One of his favorite dishes is a traditional hearty boeuf bourguignon slow-cooked for many hours.

Mike Tse

From Hong Kong to Bordeaux, Mike has worked with the many guises of wine, including wine auctions, hospitality and winemaking. Early on, Bordeaux won his heart, and he can’t wait to return to La Conseillante in Pomerol but in the meantime, a rare steak and glass of Bordeaux momentarily transport him back to France. Mike passed the WSET Diploma in 2021 attaining a mark of Merit. He also holds qualifications from Wine Scholar Guild and the Court of Master Sommeliers. The opportunity to discover new and different styles of wine is what draws Mike to wine and he is not afraid to experiment with wine and food pairings. His current favourite is braised abalone with a yeasty champagne. The way the crisp acidity of champagne balances the richness of the abalone is what makes the dish truly sing.

Frances Tseng

The stories of wine, from terroir to glass, captivate Frances Tseng. A creative at heart with a wealth of experience creating campaigns for luxury clients, Frances dedicates her creative talents to sharing insights about the world of fine wine. As a graduate of the University of Southampton and HKU Space with a MA in Fashion Management and a Diploma in Interior Design respectively, it is no surprise Frances enjoys jazz music, photography and architecture, all of which pair perfectly with wine travel. Spain, New Zealand and Italy have been ticked off an ever-growing list that also includes Bordeaux and Napa! When she is at home, Frances cooks up a delicious pork rib soup with ham and Chinese red date, followed by Taiwanese beef noodle, all paired with a glass of her favourite wine – the perfect way to finish the day!

Roy Ip

Retail and Event Specialist

Old school Cantonese noodles with wonton or dumpling is on Roy Ip’s plate when he’s looking for comfort food, which is in stark contrast to his signature dish when at home – Carbonara, made the traditional Italian way, not a slice of bacon or drop of cream in sight! Fascinated by wine’s ability to transport one back through time by way of smell and taste, Roy also hopes to one day be transported to the Champagne region. The chance to see the magnificent underground cellars of the region alongside slumbering bottles of decades passed will be a goal realised. Previous experience in service and hospitality have provided Roy with skills that are proving invaluable for his role at Ginsberg+Chan in retail and event management.
