A real hidden gem in the Rhone Valley, the Japanese vintner based in the town of St Peray is one of the biggest ambassadors for natural wines in the region, eschewing the use of sulphur completely and letting his vines grow naturally, free from any intervention. Inspired by fellow natural winemaker Thierry Allemand with whom he??apprenticed??for, the winemaking also follows a non-intervention style, which often leads to long ferments, with some cuvees known to bubble away even after five years in cask.??
Jeb Dunnuck (Wine Advocate) describes these wines as having "serious, old-school notes of cassis, crushed violets, tons of minerality and new saddle leather. It has firm tannin, full-bodied richness and a slightly compressed style on the palate, but I like its purity."??
