Doron Rav Hon is among one of the most exciting winemakers coming out of Israel, making wines in the famed Judean Hills region. He studied oenology in Burgundy and furthered his skills at Domaine Jacques Prieure and also Chablis and Champagne, before returning to his native home to setup Sphera. The White Signature is a bend of 75% Semillon, 25% Chardonnay aged in French oak for 10 months. A slightly buttery nose that reveals notes of citrus, baked apple, toasty vanilla. A hint of floral notes gives the wine a nice freshness, balanced with racy acidity. Superb.

This declassified Saint-Joseph shows the lighter side of Syrah, with an almost Burgundian-elegance. Ripe earthy notes of blackberries and raspberries, with a touch of pepper spice, there is ample acidity and a lightness of tannins which lends the wine a very soft and gentle finish.
